SAYO — meaning “born at night” — is a dual-concept Japanese dining experience in Atlanta. One half of the room is devoted to an elevated chef's tasting menu, shaped by the season and served at a quiet counter. The other half offers refined casual cuisine: precise sushi, signature rolls, and shareable plates made for a more relaxed evening.

We work with seasonal fish and local produce, and let each ingredient do most of the talking. The room is intentionally quiet: warm wood, paper light, and space between tables so that conversation, and the food, can be heard.

Whether you sit at the counter for a chef's tasting or at a table for a first date, we hope to give you something that feels honest — precise, seasonal, and served without ceremony.
